Whet your appetite with this easy to make creamy pumpkin chipotle soup, great for kicking-off a holiday feast.
Mix all ingredients, except pumpkin seeds, in a large saucepan. Heat to a boil, reduce heat and simmer for about 20 minutes. Carefully add the soup into a vitamix or blender, remove the center piece of the lid, place a towel over the hole in lid to vent the top. Blend until smooth, return to the pot and heat until hot.
Taste and adjust seasonings. Serve in warmed bowls garnished with pumpkin seeds.
