Pollo Asado Marinated in Citrus and Modelo

Pollo Asado is a family favorite! Even though my dad has the best Carne Asada marinade I have to give it to my uncle for the best chicken marinade. For the past 4 years it’s been a tradition to make this chicken a dish in our ofrenda to honor one of my uncles who would always request Pollo Asado on his birthday. Now we make sure he still enjoys his favorite dish when he visits on Día de los Muertos.

Ingredients
Pairs Well With: Modelo Especial
- 2 whole chickens
- 1 bottle of Modelo Especial beer
- 1 garlic head
- 1 onion
- 2 tablespoons peppercorn
- 6 tablespoons chicken seasoning
- 1 cup of pineapple juice
- 1 cup orange juice
- 1/2 cup of lime juice
- 2 tablespoons crushed oregano
- 1/2 cup oil
Directions
Step 1: Spatchcock both chickens.
Step 2: To your blender you’re going to add your onion, garlic head, and peppercorns - blend with your Modelo beer.
Step 3: Pour your mixture onto your chickens, adding your pineapple, orange and lime juices.
Step 4: Add all of your seasonings including the crushed oregano and oil. Make sure your chicken is fully covered with the marinade.
Step 5: Marinate for a minimum of six hours or overnight in the fridge.
Step 6: I preheat my grill on high to make sure I get nice grill marks on my chicken.
Step 7: As soon as I put my chicken on the grill, I bring the flame all the way to low to make sure the sugars on the marinade don’t burn and the chicken cooks nice and slow, leaving it super juicy and moist.
Step 8: Cook until the internal temperature is 165° then let it rest for approximately 30 minutes before cutting and serving.
